Simple 15 Bean Soup Recipe (Meatless)
This 15 bean soup recipe is easy and delicious. No meat makes it super inexpensive but even meat eaters will LOVE it.
Ingredients
1 bag of 15 bean soup beans rinsed and soaked
2 cups chopped yellow onion
2 cups chopped celery
2 tablespoons minced garlic
3 tablespoons olive oil
2 cans sliced carrots, drained
1 can tomato sauce
5 cans (75 oz) water
3 heaping tablespoons better than bouillon paste
salt and pepper to taste
Instructions
Prep Beans ahead of time by rinsing, sorting, and soaking overnight.
Add onions, and celery and olive oil to a soup pot and saute until translucent about 7 minutes. Add minced garlic and saute for an additional 2 minutes.
Add the remaining ingredients to the soup pot and bring soup to a boil for 10 minutes. Reduce heat to medium/low, cover, and simmer for about an hour or until the beans are thoroughly cooked.
Hi! When you say better than boullion paste, I know they offer chicken and beef flavor…. Did you use chicken or is there a veggie paste? Thanks 🙂
