EASY Shredded Chicken Tacos in the Pressure Cooker

These easy to make shredded chicken tacos prepared in the pressure cooker are so delicious! Using minimal ingredients, they are simple yet satisfying!

Ingredients

1/4 cup olive oil

1/2 cup salsa divided

4 chicken breasts

6 tablespoons taco seasoning

Juice of 1 lime

Instructions

  • Pour 1/4 cup olive oil in the bottom of the pressure cooker pot
  • Add 1/4 cup of salsa
  • Place 4 chicken breasts on top of oil and salsa
  • Sprinkle 6 tablespoons of taco seasoning over chicken breasts
  • Squeeze the juice of one lime over everything
  • Place lid on pressure cooker and make sure it is sealed
  • Set cooker to high pressure for 25 minutes (if using frozen chicken, cook for 8 minutes per chicken breast)
  • When the pressure cooker is done, quick release the steam valve
  • Now its time to shred the tacos, using a hand mixer is the fastest way! (There will be a lot of juices in the pot, but just mix it all in, no one likes dry chicken!)
  • Serve with fresh guacamole or your favorite toppings.

Notes

This recipe can also be made in a slow cooker or crock pot. If using a slow cooker, cook on low for 6 hours or high for 4 hours.
